Cookie bases collection
From various blogs and hidden twitter posts, I've gathered a decent amount of cookie recipes that don't differ from each other
too much but whose textures are impactful nonetheless.
Every recipe here follows the same procedure, which is: whisk together dry ingredits on one bowl, whisk together fats in another, add dry to fats and fold everything in with the preferred toppings until everything comes JUST together and there's no flour remains in the bowl. You don't want to overmix and start forming gluten (=tougher cookie, more cake like). And always chill before baking.
