Cookie bases collection

From various blogs and hidden twitter posts, I've gathered a decent amount of cookie recipes that don't differ from each other too much but whose textures are impactful nonetheless.

Every recipe here follows the same procedure, which is: whisk together dry ingredits on one bowl, whisk together fats in another, add dry to fats and fold everything in with the preferred toppings until everything comes JUST together and there's no flour remains in the bowl. You don't want to overmix and start forming gluten (=tougher cookie, more cake like). And always chill before baking.

Disclaimer: I don't claim any of these recipes as my own. This is a simple personal collection.

Cookie base with tea flavoring

  • 153gr flour
  • 10g matcha
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 100g butter -> browned
  • 50gr light brown sugar
  • 1 egg
  • 120g white chocolate
  • optional: additional choc. to top before baking
Bake at 175C for 10-13 min.
Thick cookies, chewy and with a nutty flavor.

Cookie base with frozen fruits

  • 240gr flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 160gr melted butter
  • 220gr white sugar
  • 1 egg
  • 1 tsp vanilla
  • 180gr white chocolate
  • 80gr frozen raspberries (chop messily and add them just before baking, to prevent thawing)
Bake at 180C for 10-12 min.
These are VERY chewy cookies, on the thin side.

Cookie base with maple flavor

  • 180gr flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 150gr butter -> browned
  • 200gr light brown sugar
  • 1 egg
  • 40ml maple syrup
  • 1 tsp vanilla
  • 200gr dark chocolate
  • 60gr walnuts
Bake at 180C for 10-15 min.
These are VERY chewy cookies, on the thin side.

Thick cookie base

  • 195gr flour
  • 3/4 tsp baking soda
  • 1/8 tsp cinnamon
  • 1 tbsp vanilla
  • 1/4 tsp salt
  • 145gr butter -> browned
  • 175gr brown sugar
  • 35gr white sugar
  • 1 egg
  • 195gr semi sweet chocolate
Bake at 175C for 10-12 min.
These are crinkly thick cookies.

Generic cookies

  • 160gr flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 113gr butter -> browned
  • 50gr light brown sugar
  • 50gr white sugar
  • 1 egg
  • 130gr of whatever chocolate or nuts mix you want
  • You can also roll them in sugar with spices/freeze dried fruits
Bake at 175C for 10-12 min.
These are crinkly thick cookies.
